1.This position is responsible to provide the DOF and F&B Director with cost of sales information needed to control costs. Established and administrated sound food and beverage cost control systems and procedures with the hotel to ensure that food and beverage profit are maximized. Consistent with high standards of quality and service.

2.To ensure effective analysis of food costs by commenting on variances between potential and actual food costs, analyzing recipes, yields and portioning of orders and recommending accordingly.
